Anti-Inflammatory Salad


Piggy backing off the last post, today I made an anti-inflammatory salad for "break-fast". Let's see if I can remember everything!


The Salad

Approximately,

4 handfuls of baby spinach

1/4 handful of walnuts

1/2 handful of blueberries

5 olives

A few slices of red onion

Dollop of humus

Sprinkling of feta

Feel free to add a protein source!



SUPER ANTI-INFLAMMATORY DRESSING:

I didn't really measure but I will guess, and I made more than I needed so I have extra for next time.

1 cup olive oil

1/3 cup balsamic

Chunk of fresh ginger cut up into small pieces

3 cloves of garlic

Big pinch of turmeric powder

Drizzle of honey (I know! oopsie)

Salt and pepper to taste


I blended until smooth. First time I made it and it was delicious! Hope you try it - if you do let me know! xo
